I thought I'd put up a post on one of my other loves besides Make up and things, It's food.
This recipe is a variation on a soup I had a lot of when I was in Malaysia, I just fell in love with it. I find it is especially good if you are feeling run down or have a touch of the flu, Spicy food is always good when you have a cold because it helps clear out the sinuses, Plus this has the added advantage of not being heavy.
Another reason I love this soup is you can pretty much put whatever you want in it. Whatever you have in the fridge or freezer.

On to the pictures......
Chop up your ingredients into bite size chunks with the exception of the coriander and the parsley. For this chop them up small.
Into a large pot pit a tablespoon of Olive oil and add your Red Onion and the Carrots. Stir until the onion is cooked and carrot has just a bit of a bite to it.
Add your thinly sliced chicken, Stir until Chicken is white on the outside but still a little pink on the inside.
Add 2 pints or a litre of water. Simmer for 5 minutes.
Add the cauliflower and simmer until the cauliflower is almost cooked.
Add the salt, pepper, tomato paste, Chili paste or hot pepper sauce, tom yam paste and the parsley and stir well.
Add the asparagus, the coriander, the lime juice and the limes.(Don't worry we take these out afterwards) Stir until asparagus is cooked about 2 minutes.
My camera didn't take the picture of the noodles for some reason, You just put the noodles in and leave simmering for about 3-5 minutes until the noodles are cooked.
At the very end before you serve throw in a handful of Little gem lettuce leaves for extra crunch. Don't forget to take out the limes! Serve in a bowl with chopsticks and a spoon.

Ingredients:
1 cup of Chopped Carrots.
1 cup of Sliced Red Onion.
2 cups of Bite size chunks of Cauliflower.
1 cup of Asparagus cut into 2" lengths.
1 cup of Chopped Coriander.
3 cups of Thinly sliced Chicken Breast.
1 head of Little Gem Lettuce (or any crunchy lettuce).
2tbsp of Tomato Paste.
1tbsp of Chili Paste (Hot Pepper Sauce).
1tbsp of Tom Yam Paste.
1tbsp of Salt.
1/2 tbsp of Cracked Black Pepper.
1tbsp of Chopped Parsley.
1 litre of Water.
4 Medium Noodle Nests.
The juice of 2 Limes.
